  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons rose water
  • 1/4 teaspoon ground cardamom (optional)
  • A pinch of salt
  • 2–3 drops natural pink food coloring (optional)

Pistachio Mix

  • 3/4 cup shelled unsalted pistachios, finely chopped
  • 2 tablespoons pistachio paste (optional, for a stronger pistachio flavor)

Garnish

  • Chopped pistachios
  • Dried edible rose petals
  • Crushed freeze-dried raspberries (optional)

Instructions

Step 1: Heat the Dairy

In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until steaming but not boiling.

Step 2: Whisk the Egg Mixture

In a separate bowl, whisk together the egg yolks and sugar until pale and creamy.

Step 3: Temper the Eggs

Slowly pour a little of the hot milk mixture into the egg mixture while whisking continuously.

Gradually add the remaining hot milk.

Step 4: Cook the Custard

Return everything to the saucepan.

Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon (170–175°F / 77–80°C).

Do not allow it to boil.

Step 5: Flavor the Custard

Remove from heat.

Stir in:

  • Vanilla
  • Rose water
  • Cardamom
  • Salt
  • Food coloring (if using)
  • Pistachio paste (optional)

Step 6: Chill

Pour through a fine-mesh strainer into a clean bowl.

Cover and refrigerate for at least 6 hours or overnight.

Step 7: Churn

Pour the chilled custard into an ice cream maker.

Churn according to the manufacturer’s instructions.

During the last few minutes, add the chopped pistachios.

Step 8: Freeze

Transfer to a freezer-safe container.

Cover tightly and freeze for 6–8 hours until firm.

Step 9: Serve

Let sit at room temperature for 5 minutes before scooping.

Top with chopped pistachios and edible rose petals.

Frequently Asked Questions

1. Can I make this without an ice cream maker?
Yes. Freeze the chilled mixture in a shallow container and stir vigorously every 30–45 minutes for about 4 hours to reduce ice crystals.

2. Can I use salted pistachios?
Unsalted pistachios are recommended. If using salted pistachios, reduce or omit the added salt.

3. Can I use rose syrup instead of rose water?
Yes, but reduce the sugar since rose syrup is sweetened, and expect a slightly different flavor and color.

4. Why did my ice cream become icy?
This usually happens if the custard wasn’t chilled enough, the mixture contains excess water, or it was not stored in an airtight container.

5. Can I make it without eggs?
Yes. Use a no-cook base made with sweetened condensed milk and whipped cream or thicken the mixture with cornstarch.

6. Which pistachios are best?
Fresh, unsalted, shelled pistachios provide the best flavor and vibrant green color.

7. Can I add other flavors?
Yes. Saffron, orange blossom water, or a small amount of finely grated lemon zest pairs beautifully with rose and pistachio.

8. How long will homemade ice cream stay fresh?
For the best flavor and texture, enjoy within 2 weeks when stored properly in the freezer.
