Ingredients
For the Sweet Potato Boats
4 medium sweet potatoes
1½–2 tablespoons extra-virgin olive oil
½ teaspoon salt
½ teaspoon freshly ground black pepper
For the Pecan, Feta & Date Crumble
½ cup raw pecans
5–6 Medjool dates, pitted
2 oz (about ½ cup) crumbled feta cheese
1 small handful fresh arugula, roughly chopped
Zest of ½ lemon
½ teaspoon salt
½ teaspoon black pepper
Optional Tahini-Balsamic Drizzle
2 tablespoons tahini
1 teaspoon pure maple syrup
1 teaspoon balsamic vinegar
Pinch of salt
1 tablespoon water, plus more if needed
Instructions
Prepare the sweet potatoes:
Preheat the oven to 425°F (220°C). Wash and scrub the sweet potatoes thoroughly. Pat them dry and cut each potato in half lengthwise.
Season:
Place the sweet potatoes cut-side down on a large baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.
Roast:
Roast for about 25 minutes, then carefully flip the potatoes cut-side up. Continue roasting for another 8–10 minutes, or until the centers are completely tender when pierced with a fork.
Toast the pecans:
During the final few minutes of roasting, place the pecans on an empty area of the baking sheet or on a small separate tray. Toast for approximately 5 minutes, watching carefully so they don’t burn. The original recipe also uses briefly toasted pecans for the crumble.
Make the crumble:
Let the pecans cool slightly. Roughly chop them. Add the pitted dates and chop until they’re broken into small pieces.
Add the feta and arugula and continue chopping gently until everything forms a chunky crumble.
Add the lemon zest, salt, and black pepper. Mix well. Keep the crumble slightly chunky rather than turning it into a paste.
Create the boats:
When the sweet potatoes are tender, gently press down the center of each half with a fork. Don’t flatten them completely; create a shallow space for the topping.
Add the topping:
Generously spoon the pecan-date-feta crumble over each sweet potato.
Make the optional drizzle:
Whisk together tahini, maple syrup, balsamic vinegar, salt, and water until smooth. Add a little more water if needed to create a pourable consistency.
Finish and serve:
Drizzle the tahini-balsamic sauce over the sweet potato boats and serve warm.

Helpful Tips

For crispier boats: Roast the potatoes cut-side down first so the exposed surface develops caramelized edges.

For a less-sweet version: Use 4 dates instead of 5–6 and skip the maple syrup in the drizzle.

For extra flavor: Add a pinch of smoked paprika or crushed red pepper flakes to the sweet potatoes.

For meal prep: Prepare the crumble separately and refrigerate it in an airtight container. Reheat the sweet potatoes and add the crumble just before serving.

Common Questions & Answers

Q: Can I use walnuts instead of pecans?
A: Yes. Walnuts work very well and provide a slightly more earthy flavor.

Q: Can I use regular dates instead of Medjool dates?
A: Yes. If the dates are particularly dry, soak them in warm water for 5–10 minutes and pat them dry before chopping.

Q: Can I prepare these ahead of time?
A: Yes. Roast the sweet potatoes and prepare the crumble separately. Refrigerate both, then reheat the potatoes and add the crumble before serving.

Q: Can I make this vegan?
A: Yes. Use a dairy-free feta alternative and replace the honey or other non-vegan ingredients if your chosen version contains them. The optional drizzle uses maple syrup.

Q: Can I skip the arugula?
A: Absolutely. Fresh parsley, baby spinach, or finely chopped kale can work instead.

Q: What if I don’t have tahini?
A: Simply omit the drizzle or make a quick sauce with olive oil, lemon juice, balsamic vinegar, and a little maple syrup.

Q: Are these a main dish or side dish?
A: They’re excellent as a side dish. For a more filling vegetarian meal, serve two halves per person alongside a bean or lentil salad.

Q: How do I store leftovers?
A: Store the roasted potatoes and crumble separately in airtight containers in the refrigerator for up to 3 days. Reheat the potatoes and add the cold or room-temperature crumble afterward.

Q: Why is the crumble not sticking to the potato?
A: Gently press the center of the roasted sweet potato with a fork first. The soft surface gives the crumble something to cling to.
