👩🍳 Instructions
1. Make the biscuit base
Mix biscuit crumbs, melted butter, brown sugar, cinnamon, and salt until evenly combined. Press firmly into the bottom of a 9 × 7-inch rectangular container. Chill for 15 minutes.
2. Make the blueberry sauce
Add blueberries, sugar, and lemon juice to a saucepan. Cook over medium heat for 5–7 minutes. Mix cornstarch with water and stir it into the blueberries. Cook for another 1–2 minutes until thickened. Remove from heat and cool completely.
3. Prepare the cheesecake filling
Beat cream cheese and powdered sugar until smooth. Add vanilla, lemon juice, and sour cream. Mix until creamy.
In another bowl, whip the cold heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
4. Assemble the dessert
Spread half of the cheesecake mixture over the chilled biscuit base. Spoon some cooled blueberry sauce over it and gently swirl.
Add the remaining cheesecake mixture and smooth the top.
5. Add the blueberry topping
Drizzle the remaining blueberry sauce across the surface and gently swirl it with a spoon. Scatter fresh blueberries over the top, matching the look of the photo.
6. Chill
Cover and refrigerate for at least 4–6 hours, preferably overnight.
