Blue Raspberry Coconut Protein Whip

A light, creamy, fruity dessert with a bright blue-raspberry flavor, coconut topping, and plenty of protein. It is sugar-free when using sugar-free gelatin and a no-sugar-added protein powder.

Ingredients

1 packet (0.3 oz / 8.5 g) sugar-free blue raspberry gelatin mix
1 cup boiling water
1 cup plain or vanilla nonfat Greek yogurt
1 scoop (about 25–30 g) vanilla protein powder
½ cup unsweetened coconut milk, preferably the refrigerated beverage type
1 teaspoon vanilla extract
½ cup light or sugar-free whipped topping
¼ cup unsweetened shredded coconut

Instructions
1. Prepare the gelatin

Add the sugar-free blue raspberry gelatin mix to a medium bowl.
