  • 1 cup (100 g) shredded cheddar cheese
  • 2 tablespoons grated Parmesan (optional)

Optional Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon chopped parsley

Instructions

Step 1: Make the Dough

  1. In a large bowl, combine:
    • Flour
    • Salt
    • Sugar
  2. Add warm water and oil.
  3. Mix until a rough dough forms.
  4. Knead for 8–10 minutes until smooth and elastic.
  5. Cover and let rest for 30 minutes.

Step 2: Prepare the Cheese

Mix together:

  • Mozzarella
  • Cheddar
  • Parmesan
  • Garlic powder (if using)
  • Herbs (if using)

Set aside.

Step 3: Divide the Dough

Divide into 8 equal balls.

Keep covered to prevent drying.

Step 4: Roll and Layer

For each dough ball:

  1. Roll into a very thin circle (about 10–12 inches).
  2. Brush generously with melted butter.
  3. Sprinkle a thin layer of cheese over the surface.
  4. Roll into a long log.
  5. Coil the log into a spiral (like a cinnamon roll).
  6. Cover and let rest for 10 minutes.

Step 5: Flatten

Roll each spiral gently into a 7–8-inch round, taking care not to press too hard so the flaky layers remain.

Step 6: Cook

Heat a lightly greased skillet over medium heat.

Cook each flatbread for 3–4 minutes per side, until:

  • Golden brown
  • Crisp outside
  • Cheese melted
  • Layers cooked through

Brush with butter after cooking if desired.

Frequently Asked Questions

Can I use a different cheese?

Yes. Monterey Jack, provolone, Gouda, Swiss, feta, or a blend of your favorites all work well. Soft cheeses may make the filling creamier, while harder cheeses add a sharper flavor.

Can I bake these instead of pan-frying?

Yes. Bake on a parchment-lined baking sheet at 400°F (200°C) for 15–18 minutes, flipping halfway through for even browning.

Why aren’t my flatbreads flaky?

Flakiness comes from:

  • Rolling the dough very thin
  • Brushing each layer with butter or oil
  • Rolling into a log and coiling before flattening
  • Allowing the dough to rest so it stays elastic

Can I make the dough ahead of time?

Yes. Refrigerate the dough for up to 24 hours. Let it come to room temperature before shaping.

Can I add fillings?

Absolutely. Popular additions include:

  • Cooked spinach
  • Green onions
  • Chopped herbs
  • Jalapeños
  • Crumbled feta
  • Cooked bacon or ham
  • Sautéed mushrooms

How do I know they’re fully cooked?

The flatbread should be golden brown on both sides, feel firm around the edges, and the cheese should be fully melted. If the outside browns too quickly, lower the heat slightly and cook a bit longer.
