Soft Homemade Skillet Pita Bread

Yield: 10 pitas
Prep Time: 20 minutes
Rise Time: 1½–2 hours
Cook Time: 20 minutes
Total Time: About 2½ hours

Ingredients

Dough

  • 3½ cups (440 g) all-purpose flour
  • 2¼ teaspoons (1 packet) active dry yeast
  • 1 tablespoon granulated sugar
  • 1¼ teaspoons salt
  • 1¼ cups (300 ml) warm water (105–110°F / 40–43°C)
  • 2 tablespoons olive oil

Optional

  • Melted butter for brushing
  • Fresh parsley
  • Garlic powder
  • Sesame seeds

Instructions

Step 1: Activate the Yeast

  1. Combine the warm water, sugar, and yeast in a bowl.
  2. Let stand for 5–10 minutes until foamy.

If the mixture doesn’t foam, the yeast may no longer be active or the water may have been too hot or too cold.

Step 2: Make the Dough

  1. In a large mixing bowl, combine the flour and salt.
  2. Add the yeast mixture and olive oil.
  3. Mix until a shaggy dough forms.

Step 3: Knead

Knead by hand for 8–10 minutes, or with a stand mixer (dough hook) for 5–6 minutes, until the dough is smooth, soft, and elastic.

If sticky, add flour 1 tablespoon at a time.

If dry, add water 1 teaspoon at a time.

Step 4: First Rise

  1. Place the dough in a lightly oiled bowl.
  2. Cover with a towel or plastic wrap.
  3. Let rise for 1–1½ hours, or until doubled in size.

Step 5: Divide

Punch down the dough.

Divide into 10 equal pieces.

Roll each piece into a smooth ball.

Cover and let rest 15 minutes.

Step 6: Roll

Roll each dough ball into a circle about:

  • 6–7 inches (15–18 cm) wide
  • ¼ inch (6 mm) thick

Avoid rolling them too thin to help them stay soft and puff while cooking.

Step 7: Cook

Heat a dry cast-iron skillet or heavy nonstick pan over medium-high heat.

Cook each pita:

  • 1½–2 minutes on the first side
  • Flip and cook 1–2 minutes on the second side

They should puff slightly and develop golden brown spots.

Brush with melted butter immediately after cooking if desired.

Stack the cooked pitas and cover with a clean kitchen towel to keep them soft.

Frequently Asked Questions

Q: Why didn’t my pita puff?
A: A hot cooking surface, properly rested dough, and adequate hydration all help create steam that makes the pita puff. Even if they don’t puff fully, they’ll still be soft and delicious.

Q: Can I bake these instead?
A: Yes. Bake on a preheated baking stone or baking sheet at 475°F (245°C) for 3–5 minutes until puffed and lightly golden.

Q: Can I use whole wheat flour?
A: Yes. Replace up to half of the all-purpose flour with whole wheat flour. For 100% whole wheat pitas, you may need to add a little more water because whole wheat flour absorbs more moisture.

Q: Can I make the dough ahead of time?
A: Yes. After the first rise, refrigerate the dough for up to 24 hours. Let it come to room temperature before dividing and cooking.

Q: Can I use instant yeast instead of active dry yeast?
A: Yes. Use the same amount (2¼ teaspoons) and mix it directly with the flour, skipping the proofing step.

Q: How do I keep the pitas soft?
A: Stack them as they come off the skillet and cover them with a clean kitchen towel. The trapped steam helps keep them soft and flexible.
